If you’re looking for a jewelry post, so very sorry. However, if you’re cooking tomorrow, I hope this post will help a bit. I discovered this make ahead gravy recipe last year and was overjoyed! It is easy, scrumptious, and no last-minute gravy making stress. There are recipes on-line, but I’ll share it in a nutshell.
Throw 3 turkey wings( pierce the skin all over to release the fat when roasting) and giblets in a roasting pan with cut up carrots, celery, onion, one whole garlic (cut in half), and some fresh thyme. Spray with vegetable oil and toss to coat. Roast for 90 minutes at 450 degrees. Toss around half way through. Take out and throw everything into a large dutch oven. Add one cup white wine, and 8 cups chicken stock. Broth works too. Bring to a boil and reduce heat to a simmer for about one hour to reduce liquid by half. Then, strain off the liquid into a container. Throw all the meat and veggies away. They’ve done their good work! Put the liquid in the frig for a couple of hours to let the fat gel on the top. Scoop this off and keep 1/2 cup.
Make a roux with the 1/2 cup turkey fat and 1/2 cup flour in a big sauce pan or Dutch oven. Whisk this mixture over medium high until honey colored, about 2 minutes. Do not skip this step! And do not leave it. Gradually, whisk in the turkey stock and let simmer about 10 minutes until thickened. This is your gravy for tomorrow!
All I have to do is reheat the gravy and add some of the yummy pan drippings from the turkey! Salt and pepper to taste.
